As a company, Ash & Elm Cider Co. strives to make quality ciders using apples from around the Midwest and to help cultivate the market for craft cider in Indiana. Each cider we make uses fresh-pressed apple juice that is never from concentrate and uses all-natural ingredients. We hand-peel every lemon that goes into Fleeting Youth; we use real fruit infusions in our fruited ciders instead of syrups or fruit concentrates; we crush, toast, and blend whole spices into our spiced ciders like Autumntide and Marigold. Though we release a wide range of styles, you’ll know you’re drinking an Ash & Elm Cider Co. cider by our focus on making complex, drinkable, apple-forward ciders.

Position Summary — The Kitchen Manager oversees and executes the food program of our taproom establishment. They work with the General Manager and the Back of House staff to ensure the food served out of the kitchen is of high quality and is consistent. They are a team player and an executer—leading the BOH team to produce efficiently while maintaining a positive and collaborative work environment. They manage ordering, inventory, and special menus while maintaining a clean and safe environment. The KM is a key member of the Ash & Elm Cider Co. management team, and must model the values of the brand: creating a welcoming and inclusive space for our customers, caring about our community, and being kind.
Essential Functions:
Lead and act in a manner that is consistent with our Mission, Vision, and Values.
Training a team of line and prep cooks on all recipes and techniques.
Organizing and maintaining the kitchen, including inventory, prep lists, and ordering.
Delegating tasks and leading cooks during service.
A skilled cook capable of jumping into any role within the kitchen during busy times.
Critical thinking and planning skills.
Ability to address staff directly and clearly.
Make and serve menu items ordered by customers during service hours.
Ensure BOH staff are prepared for their shifts and have the skills, tools, and ingredients to complete their work.
Handle ordering and inventory management.
Working with the General Manager to hire, fire, coach and discipline back-of-house staff.
Work with the General Manager to create and manage operational systems for the kitchen.
Work with the General Manager and Management to create food specials, pairing dinners, and seasonal menus as necessary.
Work with the General Manager to create BOH schedules that align with flow of traffic and stay within budget.
Manage food costs, waste, and portion sizes to align with budget targets
Maintain ServSafe standards of cleanliness in the kitchen at all times.
Requirements — The ideal candidate will have at least 3 years of experience working in the food industry. Food prep and kitchen experience are necessary skills. Maintaining a cool head under pressure and working well independently are required skills. Being able to prioritize competing tasks is an essential part of the job. Good communication skills, as well as an interest in being a part of a small-business and being flexible is also a requirement of the job.

Compensation — This is a full-time role with an pay rate based on experience. It requires evening and weekend hours. Full-time members of Ash & Elm Cider Co. receive paid-time off, vacation pay, vision/dental and disability benefits and an employer-matched IRA.
